REGULATIONS
Shelfex™ CO may be labelled as cultured sugar and olive pulp extract, approved as GRAS antimicrobial by FDA, USA. The regulations governing the use of Shelfex™ CO vary considerably in the countries in which it is currently approved.

It is recommended to use it after ensuring compliance with your local regulations.
Major variety of foods are susceptible to food quality deterioration by oxidation and gram-positive bacterial growth. The growth of heterofermentaive Lactobacillus results in visible spoilage, gas formation and pH decrease. They produce undesirable sensory attributes, such as sour aroma and taste.
 
MAYONNAISE
Shelfex™ CO added to Mayonnaise has proven its effectiveness against oxidative off-odor development and Lactobacilli growth at room temperature for more than 120 days.
 
COOKED UNCURED MEAT
Shelfex™ CO can preserve the integrity of cooked uncured meat with minimal taste impact.
