DESCRIPTION
Proteria® AL is a cultured sugar fermented by food culture strain of Lactococcus lactis, which is mainly used to improve the overall microbial stability of cooked foods.

REGULATIONS
Proteria® AL is recommended to be labelled as cultured (corn) sugar, approved as GRAS by FDA, USA. The regulations governing the use of Proteria® AL vary considerably in the countries in which it is currently approved. Advice regarding the legal status of this product is available on request. 

It is recommended to use it after ensuring compliance with your local regulations.
Lactic acid bacteria (LAB), Listeria and heat resistant spores represent a major concern for deterioration and safety in cooked foods. Proteria® AL is a clean label ingredient which can be used to inhibit these microorganisms for long-term storage.
 
COOKED UNCURED TURKEY
1% (w/w) of Proteria® AL was effective against Listeria monocytogenes in cooked (un)cured turkey products for more than 90 days.
 
FRANKFURTER
1% (w/w) of Proteria® AL was effective against Listeria monocytogenes in Frankfurter sausages for more than 120 days.
