DESCRIPTION
Epolyly® L25 is a pure ε-Polylysine concentrate derived naturally by fermentation of Streptomyces albulus PD-1. Epolyly® L25 concentrate is produced to reach high antimicrobial activity against fungi, Gram-positive and Gram-negative bacteria. It is an ideal broad-spectrum natural antimicrobial to extend the shelf life of a variety of foods.

REGULATIONS
ε –Polylysine has been approved as a food antimicrobial in 4 countries, including China, Japan, South Korea, and the United States. The regulations governing the use Epolyly® L25 vary considerably in the countries in which it is currently approved.

It is recommended to use it after ensuring compliance with your local regulations.
ε-Polylysine Epolyly® L25 mode of action: enters the cytoplasm of bacterial cells, increases the level of ROS and the reacts with genome DNA, which induces cell death. It is an active formula to eliminate bacterial (gram positive and gram negative) population in food matrixes.
 
RTE RICE (MEAT, VEGETABLE AND SAUCE)
10 ml/Kg of Epolyly® L25 was added in RTE Rice and it was efficacy against Gram-positive bacteria (e.g. B.cereus), Molds such as P. roquefortii, and Gram-negative bacteria (e.g. P. lundensis).
 
SOUP/CHOWDER/STEW
10-20 ml/kg Epolyly® L25 has shown effectiveness against Total Plate Counts for up to 50 days in these products.
